食在丹麥,除了丹麥酥﹑曲奇﹑開蓋式三文治smørrebrød,其實,仲有最靚嘅豬腩肉。

丹麥人嗜吃豬肉。去年舉辦的國家代表菜餚選舉,最終獲得四成四選票支持而勝出的正是烤豬肉stegt flæsk。

在候選的八道菜式中,有五款均以豬肉為食材。其餘四款分別為混合免治豬肉和牛肉的karbonader﹑意為「熾熱的愛」的煙肉伴薯蓉brændende kærlighed﹑通常伴著黑麥包吃的蘋果豬肉æbleflæsk和燒豬扒svinekotelet。豬肉在丹麥菜中的普遍程度可見一斑。

當然,不得不提的還有歡渡聖誕必備的丹麥燒肉flæskesteg。這道皮脆肉滑的菜式深得丹麥人喜愛。 

  

丹麥燒肉flæskesteg

飼養豬隻是丹麥一個相當龐大的產業。丹麥農場每年為市場提供近三千萬豬隻,能滿足本土需求之餘,更大部份供運銷海外。英國人對丹麥出產的煙肉有很大的胃口,是丹麥豬肉的主要市場之一。

丹麥也在積極開拓新興市場,譬如中國對豬耳的需求,就為丹麥帶來新的商機。

丹麥生產的豬肉不獨量多,也勝在質優。業界相當重視豬隻的動物權益,丹麥在這方面的要求比歐盟的標準更為嚴謹,以保障豬隻成長與運送時有較舒適的環境。此外,產業的成功除了有賴配種﹑飼養﹑屠宰等過程研發出先進技術,合作社的成立亦功不可沒。

合作社的經營方式令原以家庭為本的農場便於籌集資金,以將資源投放作購置機器﹑屠房等。這不僅有助節省成本,令價格更具競爭力,也使整個產鏈有著更緊密的合作關係。這套已發展成熟並行之有效的系統,對產業有著深遠的影響。今天,丹麥豬肉已在市場上成了品質與安全的信心保證。
